Sweet & Sour Pineapple Cauli
Have you taken a trip to this pineapple bowl yet?! I’m thinking of taking a trip here today.
Ingredients
- 1 medium cauliflower head rinsed & separated into florets chopped in half
- 3/4 cup white flour
- 1/2 cup cornstarch
- 1 cup 4 tbsp water
- 1/2 cup pineapple chunks
- 1/2 green bell pepper, chopped
- 1/2 red bell pepper, chopped
- 2 tbsp oil *you will need enough vegetable oil for deep frying
Sauce
- 1/2 cup ketchup
- 2 tbsp tamari or soy sauce
- 6 tbsp rice vinegar
- 4 tbsp sugar
Instructions
- soak florets in salt water for 15 minutes
- in large bowl, mix together, flour, cornstarch & water to make a batter
- dip floret pieces into the batter & deep fry until crispy (make sure your oil is not insanely hot as you want to give the cauliflower time to cook & not just a crispy exterior shell after a minute of frying) it should take about 6-7 minutes to cook
- once all pieces are crisp, set them aside
- In a pan, heat 2tbsp of oil (medium-high heat)
- Stir in bell peppers & pineapples for 1 minute
- Stir in sauce mixture & turn your stove heat to high
- Stir until bubbles begin to form & sauce is reduced & sticky
- mix in florets until they are all coated with sauce (do this process quickly to maintain the crisp of your cauliflower)
- *for extra crisp, once sauce is applied, spread your cauliflower pieces onto a baking pan lined with parchment paper and put it in the oven on broil for 5 minutes but watch them carefully so they do not burn
- *This dish is excellent with steamed jasmine rice
